Flexible confectionery glaze for decorating and / or glazing all types of pastry products, including refrigerated and frozen products. Ideal for the glaze of amandins or eccles.
It can also be used for the creation of mousse by mixing with whipped cream (high fat content, 32-36%)
Use :
- for glaze It melts at a temperature of about 50 degrees C, depending on the thickness of the layer. It can melt in the microwave oven, stirring occasionally or at the bain-marie. After melting it is applied to a temperature of 25-30 degrees C. Cool the product after decoration
- for mousse Mix with the whiskey 32-36% fat, in proportion of 1 part glaze / 3 parts whipped. The icing is melted at about 50 degrees C. The friction is heated and mixed with the cooled icing up to about 40-30 degrees. After cooling or the next day the mixture is mixed for about 5-6 minutes.
