Not just for stews and braised dishes
Goan shrimp curry, 4 - 6 servings
Ingredients for the sauce:
- 4 tablespoons of vegetable oil
- 2 medium onions, cut into quarters
- 2 tomatoes, cut into quarters
- 2 teaspoons of ground paprika
- 1 can of 400 ml coconut milk
- 100 g grated coconut
- 4 whole fresh red chili peppers
- 4 teaspoons coriander seeds
- 2½ teaspoons cumin seeds
- ½ teaspoon ground turmeric (or a 5 cm piece of fresh turmeric)
- 2 cm (30 g) fresh ginger, peeled
- 4 cloves of garlic, crushed
- 1 teaspoon whole black pepper
- 1 teaspoon salt Serving suggestion
- 400 g raw large shrimp (fresh or frozen)
- 100 g young spinach
- Juice from one lemon
- 1 small bunch of green coriander, coarsely chopped
Mix the sauce ingredients until a homogeneous sauce is obtained.
Place ingredients in the removable bowl, place the lid on and cook for 3 hours on the High setting or for 5 - 6 hours on the Low setting.
Just before serving, set the temperature to High and add the shrimp, spinach, lime juice, and cilantro.
Mix the ingredients well, put the lid on and simmer for about 10 minutes or until the shrimp are pink and fully cooked.
If you are using frozen shrimp, cook them for about 20 minutes.
Delicious with steamed basmati rice and roti bread.
Spanish chicken with chorizo
- 10 - 12 chicken thighs
- 200 g chorizo, skinless, chopped
- 3 mixed peppers, cut into strips
- 1 onion, finely chopped
- 6 cloves of garlic, crushed
- 2 teaspoons of smoked paprika
- 1 tablespoon of tomato puree
- 1 tablespoon oregano
- 1 tablespoon thyme
- 1 cube of chicken bouillon from Knorr
- 1 800g can of tomatoes (or fresh ripe tomatoes). Place all ingredients in the removable bowl of the Crock-Pot
Place the lid on and cook the ingredients on the High setting for 4 hours or on the Low setting for 5 - 6 hours, until the meat is tender.
Delicious with crispy burgers or a crunchy green salad.
Thai-style beef ribs - 4 servings
- 5 cm ginger, grated
- 50 g green coriander, stems and leaves separated
- 1 red onion, finely chopped
- 3 cloves of garlic, crushed
- 1 tablespoon light brown sugar
- 1 tablespoon vegetable oil
- 4 beef ribs
- 1 tablespoon soy sauce
- 50 ml oyster sauce
- 1 cube of chicken stock from Knorr
- 250 ml water
- 3 pieces of star anise
- 2 tablespoons rice wine vinegar
- salad
- reserved coriander leaves
- 1 red onion, thinly sliced
- 1 carrot, grated
- 1 red chili pepper, thinly sliced
- 10 mint leaves, chopped 10 basil leaves, chopped
- 1 tablespoon fish sauce
- 2 tablespoons soy sauce
- the juice of one lemon
- 1 teaspoon of honey
Mix the ginger, coriander stems, onion, garlic and sugar until a paste is obtained.
Heat the oil in the DuraCeramic bowl and fry the ribs until golden brown.
Remove the ribs from the bowl and lightly fry the paste for 2 minutes.
Add the ribs and the rest of the ingredients, except the vinegar.
Place the lid on and cook on High for 4 - 6 hours or on Low for 6 - 8 hours until the meat is tender.
Remove the meat and simmer the sauce with a splash of rice wine vinegar until it reduces slightly.
Mix the salad ingredients and serve with the ribs and sauce.
